

Vineyard and Olive Groves
We are keen to control yields through severe pruning and careful disbudding. To obtain our finest maturities, we take care to facilitate photosynthesis through open gobelet (GOB) cultivation for Grenache and Carignan and high trellising for the other varieties.
The grapes are harvested manually in small boxes, gravity filled and vinified in our underground cellar. Ageing in vats or barrels gives our wines a final note of elegance.
The white and rosé wines are produced by direct pressing, with cold debourbage. Fermentation takes place in temperature-regulated steel vats. For our red wines, the clusters are de-stemmed and vinified in temperature-regulated concrete vats. Daily pneumatic and manual crushing allow gradual extraction of the aromatic compounds and polyphenols. The different varieties are vinified separately.
The vineyard spreads out over 18.5 hectares, where local varieties - Grenache Blanc, Roussanne, Marsanne, Grenache Noir, Mourvèdre, Carignan and Syrah - grow alongside Merlot, Cabernet-Sauvignon, Viognier and Ugni Blanc.
Olive Groves
Our hundred-year-old olive grove covers 13 hectares, is AOC classified and consists of 95% Picholine and 5% Négrette.
